Inlet temp for the air going into evaporator is the ambient air temp with the front doors wide open. Outlet air temperature is usually measured at a center air vent outlet. Difference should be -(30-40) degF if cooling good.

If your're talking about inlet/outlet tubes to the evaporator, you need a contact temperature sensor. You can get these fairly inexpensively, but not as cheap as a $6 air temp gage you mention. You could probably get some decent temp measurments with the air temp gage by securely taping with aluminum tape, and insulating well with foam pipe wrap. Inlet/Outlet evaporator tubes should have outlet slightly colder than Inlet, 4-6 degF on some cars.
